Summer Treats...

To celebrate the real start of Summer (and as I write this, the sun has just broken through the clouds at last!) I thought you might appreciate a new recipe. Sugar Moon has just taken a week off to rest and recuperate...you can read more about where we went here....and, as usual I came home itching to get into the kitchen straight away! Work doesn't begin properly until tomorrow, so these were made at home, and use the best of the current fruits - you can easily adapt this recipe to use whatever you like best. Raspberries, blackcurrants, gooseberries will all work well here - perhaps adjusting the sugar levels in the topping if the berries are very tart.

Apricot & Blueberry Bars

Base:

150g wholemeal spelt flour (you can use regular plain flour or even gluten-free if you prefer)
1 (preferably free-range) egg yolk
150g butter
100g ground almonds
20g whole hazelnuts (or whole almonds if you prefer them)
75g light soft brown sugar
pinch Maldon or other sea salt flakes (optional, but so good!)

Additional ingredients for topping:

50g wholemeal spelt flour (or other flour as above)
50g whole hazelnuts (or almonds as above)
1 tbsp light olive oil (or other vegetable oil if you don't like the taste!)
50g soft light brown sugar (optional, depending on tartness of your chosen fruit)
1/2 tsp ground cinnamon

Preheat oven to 180c
Line a 23cm square foil tray (or equivalent tin) with baking parchment

For the base: pulse ground almonds and whole hazelnuts for a few moments in a food processor until whole nuts are in small pieces...

Add the rest of the base ingredients to the processor...
( This is the spelt flour we usually use...I love its nutty flavour and great texture...but do feel free to substitute as it won't make much difference to the finished bars!)
Pulse until the ingredients form clumps....then press around 3/4 of the mixture into the prepared baking tray (leaving the remaining mixture in the processor bowl)...
...bake the base for about 10 minutes, until it turns a light golden brown....
...this will help prevent a soggy bottom! Then cover the base with your chosen fruit. As a guide, I used 5 apricots (stoned and roughly pulled apart) and 150g fresh blueberries...
Add remaining topping ingredients to the rest of the mixture left in the processor and pulse to combine. It won't clump together as much, but will start to stick together if squeezed between your fingers. Scatter over the fruit...
...you want it to just about cover, but I always like to see a little of the berries peeping through the crumb! That's just personal preference though. Flatten the top slightly with your palms to help it stick together a little. Then bake for around 30 minutes, turning the tray halfway through the baking time to ensure an even colour...
Cool thoroughly (preferably overnight in the fridge) before lifting from the tin using the edges of the baking paper and slicing into bars. They will crumble a little at the top, but just scoop these up with your fingers and enjoy!
Apricots are one of the only fruits that I think are better cooked than raw...I just adore them in season.
These bars would actually be gorgeous eaten slightly warm as a dessert, with cream or ice cream, too! Feel free to experiment and enjoy them. I thought I'd finish with one of my absolute favourite Summer lunches - this is usually what I would eat during the week, on a baking break (probably listening to The Archers!)
A toasted slice of good sourdough (I love Richard Bertinet's loaves available from Waitrose, if I can't find any handmade) rubbed with a raw garlic clove and topped with fresh, ripe tomatoes...here I added fresh marjoram from the garden and a sprinkle of nutritional yeast flakes. And always, lots of freshly ground black pepper. Heaven on a plate! Enjoy the summer and all it offers food-wise....it won't be here for long! Sugar Moon is now back in full production...so do visit our lovely website if you haven't already.

Happy June xx

Blueberry brownies...and a question...with a prize!

September is a week old already...and here at Sugar Moon we're experimenting with some new brownie flavours and combinations. One of our customers, and fellow blogger , Guillaume suggested we try fresh blueberries...
...so we did! There are dried sour cherries in there too, for extra flavour...
and milk chocolate chips on top, as well as milk & white chocolate chunks inside...
...the colour combinations are quite beautiful, I think....
...and the tray is currently cooling on the rack before being chilled overnight prior to cutting...
I think this will be a very 'juicy' brownie - and, of course, I'm really hoping it will be delicious.

Now, for a disclosure and a question. My confession is that I'm not terribly fond of 'wacky flavoured' brownies. Some I have seen for sale elsewhere seem to contain everything but the kitchen sink! I've seen Tiramisu, Black Forest, Ginger, Strawberries & Cream, Carrot Cake....in brownie form. I love anything nutty - I think every nut just goes beautifully with chocolate...and strong, single flavour notes - like Espresso or our bestselling Salted Caramel. But we don't only bake brownies for ourselves! So my question is...what are your views on this (if you have any?!) and what is your favourite brownie flavour?

I'd absolutely love to know...so if you'd like to, please leave a comment! To act as a little thanks, I will send 6 of the blueberry brownies above to the poster of my favourite UK comment (the other 6 are being sent off to Guillaume, for his great idea...) and the best comment from 'the rest of the world' will win a little something too. But these brownies won't wait too long - so, British readers, I need those comments by midday tomorrow please so I can get them in the post in great condition! Rest of the world...you have until the next post!

Thanks so much - I can't wait to read your views!

The first morning of a new life!

So that's that! After 8 years and 3 owners...the Coffee Tree has once again changed hands, but the new people have decided to go on without me. They have their own plans and ideas. A new broom! I wish them every good thing....but I can't pretend that the past week hasn't been a strange one!
For the final few days, I thought I'd deliver some old favourites from the past...cakes that have been requested and loved many times...

like good old Blueberry Buttermilk Muffins...

and Chocolate Salted Caramel Cake....
In the middle of the week I also had the Farmer's Market - it was half-term too, and I thought the Hallowe'en theme was appropriate!

and if you read my last post, Robin's banana date cake sold out by lunchtime!

Then it was back to thinking of the Coffee Tree's final days. There was a farewell drinks party on Friday evening at the shop, full of everyone I knew...so many sweet comments and people who's lives I've shared a little of over the years. I was given cards & presents...a beautiful white orchid...I shed a few tears.
And Saturday dawned - a beautiful, sunshine day. I was up early as usual, as I wanted to make sure that everything was perfect for my final delivery - the most popular items of all, really:
Victoria Sponge Cake (with non-traditional decoration...but I couldn't resist!)

my famous cheddar scones....(pictured on their stand at the shop)

and finally...I wanted something fun, so I made these vanilla cupcakes...

that said it all in as many ways as I could think of!  I popped in a few times that day- some customers who had moved away made a special journey back to say goodbye, so I had coffee and a chat with old friends. And then it was time to really say goodbye, with a hug and a few sobs! Thanks to Sue & Barry, Roy & Sandra for being such fabulous, loyal customers. We've shared so much over the years - while supplying them I've got married, had a heart attack, two nephews have been born...we've all been through good times and bad together and supported each other through everything. I wish them all a happy & fulfilled retirement!

Monday morning - today felt very strange, will continue to feel so for a while yet, I think. I have been so programmed into always thinking of the next thing to bake for them, searching for new ideas to try out, planning my work day around them. The only customers who never gave me an order - I always just baked what I thought (hoped) would be right...and, thankfully, it usually was! A great freedom, but also a great responsibility in that arrangement.

Anyway...I'm looking forward now, as always (the only way to look!) So much to do and accomplish - I have a book to finish, I'm baking christmas cakes this week, and I have so much to plan and prepare. But I'll always think fondly of my time with The Coffee Tree...and everything it's given me over the years.

I hope you have a wonderful week and a faaaabulously spooky Hallowe'en! xo

A Plum Cake...

Sorry I haven't posted much this week but Paul took the camera with him to Cumbria...and if you take a look at my other blog you'll hopefully be glad that he did!

Anyway, he got back last night...happy to be home and just in time for me to photograph today's Coffee Tree delivery...
It's an upside down Golden Plum & Blueberry Cake.
There's caramel there too...it's a little like a cake version of a Tarte Tatin.

The juices from the plums & purple berries sink into the vanilla sponge and make it very moist & delicious. I've played around and made this with all sorts of fruits...it's especially good with peaches or apricots in summer...and you can also vary the flavour of the cake itself - so maybe a lemon sponge with fresh raspberries or an orange one with rhubarb...I think it would also be lovely served warm with cream as a dessert.
Whichever way I make it, it's a favourite at the coffee shop!

Enjoy your weekend....and eat well! We're off to London to revisit brand new restaurant Nopi in Soho. I was lucky enough to be invited to one of the opening nights on Monday evening...and I want Paul to try it too, so we'll be there for lunch tomorrow. I can't wait!! xo

Saturday treats....

I started my weekend delivery with these Black & White Cupcakes. Very heavily frosted cupcakes don't go down too well at the Coffee Tree - the customers tend to prefer more understated offerings! I thought that these fit the bill perfectly. Beautiful, vanilla sponge on the bottom and dark chocolate ganache poured glossily on top - finished with a gold sugar star..
Simple yet sophisticated? Hopefully they went down well anyway... next was one of my own creations. I call them Glazed Blueberry Bars -

sticky, oaty slices with a tart  fresh blueberry middle and lightly glazed on top (which also stops them from becoming dry.) I love to have plenty of filling so that it oozes slightly when you cut (or bite!) into them..

I always overdo everything slightly because, as regular readers will know, my baking motto (actually my LIFE motto) is 'Too much of a good thing is wonderful....!'

And lastly, with a small nod to Valentine's Day (more of which tomorrow) I baked a yummy Spice Cake with Peanut Buttercream frosting, from Rose Levy Berenbaum's 'Heavenly Cakes' book which I talked about last week...

I love anything with peanuts and it was a change to find something that used them but didn't also contain chocolate (I try and balance things with my Coffee Tree order, so that there's a fruity cake alongside something rich & chocolatey...or a very sweet thing and a savoury one) As you may be able to make out, I sprinkled the top of the cake with some tiny red sugar hearts...

but I warn you now....I won't be so subtle tomorrow!

have a wonderful Sunday xoxo

A New Year

Welcome to 2011! It seems as though the Christmas holidays went on forever...and while I really enjoyed the break (despite the snow scuppering our festive trip to Martha's Vineyard & Boston....gggrrrr!) it's very good to get back to normal!

My New Year Resolution for this blog, is to (try) and post everything I bake for our local coffeeshop. I deliver to them 6 days a week, something different each day except Sunday - so it's quite interesting. They are a wonderful customer, not least because they give me no order! I have supplied them for so long (over 6 years) that I know them and their regular customers really well and know what they like. So I get to try out lots of new recipes on some willing but critical guinea pigs! This has been invaluable while writing my cookbook, because it means that I can test many different recipes and get honest feedback - as opposed to that from family & friends who are naturally biased. These are members of the paying public, and they make it very clear if they don't like something ,or if they feel it could be improved - or if they love it! Wonderful feedback.

I've just returned from today's delivery (the first time they've been open since 24th December as they close over the holiday) So, being served at The Coffee Tree today:

Lemon Drizzle Cake (excuse the Christmas cake board - it was left over! And it's not Twelfth Night just yet...)

Fresh Blueberry & Lime Muffins. I wanted something zesty today, to counteract all that heavy, marzipanny, dried fruity indulgence that most people will have indulged in over the holidays. These are beautiful muffins and always work perfectly...

Makes 9 large muffins

Preheat oven to 200c & line 9 holes of a deep muffin pan with paper liners

300g self raising flour
150g caster sugar + 2 tbsp
200ml whole milk (preferably organic - I use Rachel's (naturally....!)
100ml sunflower oil (or you could use melted butter)
2 medium free-range eggs
150g fresh blueberries
zest & juice of 1 lime

Sift flour and sugar into a roomy bowl...add blueberries (I reserve 9 for decoration) and lime zest and mix with a fork to combine. Measure milk & oil into a mixing jug, break in the eggs and mix vigorously with a fork until the eggs are well beaten into the liquids. Pour the wet ingredients over the dry and use the fork to combine them roughly...do not overmix or the muffins will be tough. The mixture should be lumpy & a few pockets of flour are fine.Spoon into the prepared pan and top each with a reserved blueberry if you like (I just like the way they 'pop' and the purple juice runs down the sides...but that's just me!)
Bake for 20 minutes (I rotate the pan after 10 minutes for even baking) They will be risen and brown on top when ready. Leave for a few minutes before removing from the tin and placing on a wire cooling rack - I put a sheet of foil underneath to catch the syrup drips from the finishing touches! In a small cup, combine a tbsp caster sugar with the lime juice and microwave on 'full' for 30 secs to dissolve. Brush each hot muffin with the syrup, which will be quickly absorbed. Sprinkle each with a little of the remaining tbsp sugar and eat while still a little warm if possible. Delicious!

Enjoy - as I hope the coffee shop customers are. Have a great day xo
